Barnyard Millet Sweet Pulao
Ingredients
- 1 cup Barnyard millet
- 2 cups water
- 1 tablespoon ghee or oil
- 1 cinnamon stick
- 2-3 green cardamom pods
- 4-5 cloves
- 1/4 cup mixed nuts (cashews, almonds, raisins)
- 1/4 cup dried cranberries or chopped dates
- 1 tablespoon honey or maple syrup
- A pinch of saffron strands (optional)
- Chopped fresh mint leaves for garnish
Instructions :
1. Rinse the barnyard millet under cold water and drain it.
2. Heat ghee or oil in a frying pan over medium heat. Add cinnamon sticks, cardamom pods, and cloves, and roast until fragrant.
3. Toast the barnyard millet in the pan for 2-3 minutes.
4. Add salt and water to the pan and bring to a boil.
5. Cover and cook the millet for 15-20 minutes, until the water is absorbed and the grains are soft.
6. In a separate pan, dry roast the fruit mixture until lightly golden brown. Optionally, add dried cranberries or chopped dates and cook for 1 more minute.
7. Stir the cooked millet with the dried fruits, honey or maple syrup, and saffron strands (if using).
8. Garnish with chopped mint leaves before serving hot.
