Barnyard Millet Upma
Ingredients
- 1 cup Barnyard millet
- 2 cups water
- 2 tablespoons ghee or oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 green chilies, slit
- 1/2 inch ginger, grated
- 1 carrot, finely chopped
- 1/4 cup green peas
- A handful of peanuts
- Curry leaves
- Salt to taste
- Chopped coriander leaves for garnish
Instructions
1. Rinse and drain the barnyard millet under cold water.
2. In a saucepan, heat oil or melt ghee. Add mustard seeds and cumin seeds when hot, and let them splutter.
3. Add chopped onion, green chilies, and grated fresh ginger. Sauté until the onions turn translucent.
4. Add carrots, peas, and peanuts to the pan. Cook for 2-3 minutes.
5. Sauté the rinsed barnyard millet for another 2-3 minutes.
6. Pour water into the saucepan and season with salt. Bring the mixture to a boil.
7. Cover and cook the millet for 15-20 minutes, until all the water is absorbed and the millet is tender.
8. Before serving hot, sprinkle with fresh coriander.
